Homemade Ginger Ale

Was thumbing through my old cookbooks yesterday for some inspiration and came across this recipe in my first cookbook – Jamie Oliver’s Happy Days.
I realised I had all of the ingredients to make this drink (he calls it ginger beer though – but I read the ginger beer requires actual brewing!) and so why not make it for today? Loved the spiciness of the ginger and the fact that I knew exactly what went into my fizzy drink 😘

Recipe adapted from @jamieoliver
10ml honey
10ml lemon juice
5ml ginger juice (grated from a knob of ginger)
30ml rum (optional)
Handful of ice
100ml soda water
Mint leaves and lemon slice for garnish

1. Place ice in a glass
2. Stir first 3 ingredients together (add rum here if needed). Pour over ice
3. Top with soda water
4. Garnish with mint leaves and lemon slice
5. Stir and have a sip!
