Single serve cinnamon roll for when you crave the taste and don’t want to make a whole batch + I added a knob of butter in the cinnamon sugar mix *hee*.
It was still quite a bit of work for a microwave mug cake recipe but was fun to make.

80g all purpose flour
¾ tsp baking powder
a pinch of salt
45ml – 70ml water
Oil for greasing
1 tsp cinnamon powder
1½ tbsp brown sugar
1 tbsp butter (softened)
3 tbsp powdered sugar
3/4 tsp milk
Grease a standard-sized microwaveable mug with oil.
To make the dough, add flour, baking powder and salt in a bowl. Add water a bit at a time, and stir to combine. Knead until you get a smooth ball of dough.
First make the frosting. In a small bowl mix the powdered sugar with either plant-based milk or water. Add the liquid a tiny bit at a time. It doesn’t take much at all and the most you will need is ¾ teaspoon of water, perhaps a tiny drop more if you are using milk. Stir well until smooth then set aside.
- Dust your work top with some flour and roll dough into a long strip about 12 cm long and 6cm tall.
Combine all ingredients for cinnamon sugar in a bowl and spread onto dough leaving a border all round.
- Fold edges of dough in around border and roll it up.
Place rolled up dough into mug.
Pour ½ tsp of water over and place in microwave.
Microwave uncovered for 45-50 seconds in a 1200 watt microwave*. Max of 70 seconds for a lower powered microwave.
To check if it is done, insert a toothpick into the dough it should come out clean.
Prepare frosting by mixing powdered sugar and milk in a bowl until all sugar is dissolved.
Turn out cinnamon roll onto a plate and spoon over the frosting.
