Akashi

One of my favourite Japanese restaurants in Singapore, it’s been around for many years and still stands the test of time and the introduction of Japanese conveyor belt sushi chains in the 90s  (this I feel really brought Japanese dining to the masses).

The pictures below are from a recent staycation R and I had in February.

Blowing in the Wind
Edamame
Pitan Tofu (Century Egg Tofu)

This is a simple and yet very satisfying dish. A thick sauce made from the yolk, paired with the ‘white’ (or rather gelatinous ‘brown’) of the Century Egg topped with Crab stick and Spring Onions. Perhaps a lil addition of crunch would finish the whole dish off?

Gyoza

I have not had more delicate gyoza before this. Its skin was as soft as 小笼包皮. Gyoza is typically filled with minced meat and spring onions and pan-fried till golden brown. Gorgeous!

Gyuniku Udon (Beef Udon)
Gyuniku Udon (Beef Udon)

The only reason why there are 2 pictures of the Akashi Gyuniku Udon is because it’s ABSOLUTELY THE BEST I’ve ever had. I kid you not. This is a bowl that I crave for so often! Unadulterated beef-flavoured stock, thin udon (I highly recommend eating this with the thin udon cos thick udon can be overwhelming and requires too much jaw-work) and those tender oh-so-thin slices of beef that aren’t quite cooked. I’m supposing here that the chef likes to leave the last part of the cooking to the customer (cook it to whatever done-ness you want).
