Noodles are a big part of the Chinese and Singaporean diet. Anytime I’m feeling home-sick (if I’m far away) or sad, a bowl of hot soupy noodles would definitely put things right!
R’s grandma (Ah Niang) always makes us dinner on the weekdays and ANYTHING she makes just hits the spot – nothing could make you feel more at home. Last week we had a dinner of DIY Wanton Noodles sans wantons (buffet-style) with lots of char siew (barbecued meat), shredded chicken, lots of veges and the world’s richest clear soup!
Here’s how you make yourself a bowl o’ noodles:
Noodles of Love
Ingredients
1 packet of fresh Hong Kong noodles
150g/ 10 -12 slices of Char Siew (bought from any hawker stall)
150g of shredded chicken (you can get the cooked chicken from any hawker stall or the supermarket and shred it)
4 stalks of chye sim (blanched)
1 stalk of spring onion (chopped)
Soup Version
750ml of stock (boil soaked chinese mushrooms, dried scallops, wolfberries in 500ml of chicken stock and 250ml of water for 1 -2 hours. I promise you you won’t regret it)
‘Dry’ Version
Sesame oil
Chinese Black Vinegar
Oyster Sauce
Serves 2
Method (Soup Version)
1. Prepare a pot of boiling water and a large strainer.
2. Place noodles in the strainer and dip into the boiling water for about 2 minutes, swirling it around.
3. Dish out the noodles into 2 bowls with 2 stalks of chye sim each and fill the bowls with the stock.
4. Place the Char Siew and shredded chicken on top of the noodles and garnish with spring onions.
5. Soak in the comfort food aroma and then dig in!
Method (‘Dry’ Version)
1. Prepare a pot of boiling water and a large strainer.
2. Place noodles in the strainer and dip into the boiling water for about 2 minutes, swirling it around.
3. In the meantime, mix together the sesame oil, black vinegar and oyster sauce in a bowl and adjust the amounts depending on the taste you’d like to have.
4. Dish out the noodles into 2 bowls and add the sauce mixture. Toss the noodles in the sauce until it’s thoroughly coated.
4. Place the Char Siew, shredded chicken and chye sim on top of the noodles and garnish with spring onions.
5. Soak in the comfort food aroma and then dig in!

I’m so jealous you are in Singapore! I feel the same way. On my birthday we drove for 40 minutes bc I had to have some laksa, kueh teow teng & Hainan Chicken rice. I’d rather do that than a fancy resto. i’m going to try this at home – it looks easy.
